Harvest recipe by Rachel Fredricks
1 3/4 cup flour (1/2 whole wheat, 1/2 all purpose)
1/2 cup sugar
1/2 cup brown sugar
1 t baking soda
2 t cinnamon
1 t nutmeg
1/2 t clove
1 t salt
1 15 oz can pumpkin
2 eggs
1/2 cup coconut oil, melted
1 t vanilla

Whisk together dry ingredients, in a separate bowl mix together the pumpkin, eggs, oil, and vanilla. Gently mix dry and wet ingredients, do not overmix. Pour into a 8X4 loaf pan prepared with pan spray. Bake at 350* for 50 minutes.
